The cutest Poodle that you've ever seen!

I noticed I didn't have any pictures of Catheryn and her halloween costume. So here it is. This was taken a while ago. I don't know if I have any pictures of her on halloween day. So here she is. What a cutie!

Tomato Soup (dairy and wheat free) topped with Avocados

I made this soup for me today for lunch. It was great. I had to make a couple of changes to make it Wheat and dairy free and added some things to make it taste better. The measurements are an estimate I just dump and add to taste.

olive oil
1/2 onion
2 cans of diced tomatoes
2 tablespoons of better than cream cheese(dairy free) or just plain cream cheese
rosemary
basil
3 or 4 Tablespoons of orange juice or pineapple juice
A scoop of Humus
Avocado
Green onions

Saute onion in oil with rosemary and basil. After onions are a little brown put in the cream cheese. When the cream cheese has melted a little bit add the juice how ever much you want. Depends on the flavor you are wanting. After adding the cream cheese put in the can of tomatoes and scoop of humus. After tomatoes are warm put mixture in the blender and blend on high until creamy.

Pour into bowls and top with green onions and avocados.

Garbanzo Bean Chocolate Cake (Gluten Free)

A family in our church has Celiac Disease and passed this recipe my way because of our wheat free diet with Catheryn and me. It was an amazingly good cake. Very easy and somewhat healthy. I loved it, it was great. I also haven't had wheat since June so my taste buds are a little different now but I still think it was great. So for all of you out their give this cake a try. You will be impressed, I was.

Garbanzo Bean Chocolate Cake (gluten free)

1 1/2 cups semi-sweet chocolate chips
1 can garbanzo beans, rinsed and drained
4 eggs
3/4 cup white sugar
1/2 tsp. baking powder

Add last 4 ingredients into a blender or food processor and blend until smooth. Then melt the choc. chips either in the microwave and stir every 20 seconds until melted, or over the stove slowly. Then add the melted chocolate to the batter. When completely mixed, transfer to greased cake pan and bake @ 350 for 20-30 min.

Family what a great thing

Well we got a new camera. This is our first night taking pictures with it. It is a lot of fun to take random pictures. Cassidy is crying in the fourth picture and we are all crying with her in the fifth picture. We love to tease and now our kids love to tease us. It is fun the sense of humor they have. Cassidy is always teasing us. It is fun. Cayden is more into jokes. He loves to tell us all sorts of jokes. One he did tell me was," Why did the cow jump over the moon?" He response was " To give the moon a kiss. So I started laughing because that is what you are suppose to do right. He told me that it wasn't funny it was sweet. I am not suppose to laugh at sweet jokes. It is so much fun when you can have conversations with your kids and learn from them.
Familys are great!!

Happy Halloween

Well Halloween was a nice day. We went to a Halloween party at my sister in laws house. It was a lot of fun. I wasn't feeling very well so I just sat and did nothing but the kids and Curtis had fun. I had called Curtis and asked if he could come home from work because I was feeling awful and was suppose to help out at the party. So he gladly came home and had a blast. Cassidy was a tiger at the party and Cayden was a cow. For trick or treating Cassidy decided she wanted to be "The Ghost of the Forest" a Bernstein bears book. So she is wearing a pillow case and leaves sewn on, a 15 minute costume.
After trick or treated they got 2 pieces of candy and off to bed. However Cayden woke us up screaming at 10 because he has thrown up all over is pillow and bed. I think he was feeling like I had been all day. So we showered him cleaned his bed and we all went to sleep. That was our day in a nut shell.

Cassidy's Birthday Party Update

So here are all of the kids at Cassidy's Birthday Party. She had a great time. We had the kids dressed up for a Prince and Princess party. It was a lot of fun. A lot of kids also.
Here is the Cake I made that did not turn out. It is suppose to be a Crown. It looks okay at a distance but up close it was awful. Cassidy thought it was beautiful and that is all that matters, right?

Now the presents. Cassidy had lots of friends that were excited to help open presents with her. We told her that kids were going to give her gifts and that they were going to want to help opening the gifts they gave her and she needed to let them help. She did a great job and sharing.
It was a fun party but having a couple of boys changes the atmosphere. It makes it really crazy. Curtis was in charge of the games and did a good job. He really enjoys being the center of attention. I am glad the gets the opportunity quite often. It keeps him young in his old age of 31.

Cayden the button pusher!

Well this is the second time since we have moved into our house that we have woken up and our heat is not working. This morning our house was a freezing temp of 50 degrees. We just installed new thermostats so I thought that was the problem. I was pushing every button to try to get some heat. Nothing worked. Finally I remembered a month ago Cayden was playing in the garage and turned the heater off. It is just a light switch by the heater. So I went to go check out the switch and it was off. He was out working with his daddy yesterday and turned the switch. My little Cayden loves switching every switch there is, pushes every button there is, turning any key there is,. He has been able to start cars for over a year.
A couple of weeks ago, Curtis couldn't sleep and went out to the garage half dressed to work on something, when he was done he tried to get back into the house and of course Cayden had turned the lock on the door earlier that day. He was stuck out in the garage in his underwear. So luckly he had some carharts out there and put those on and opened the garage door and came to the back of the house and was banging on the window with and ruler. This was at midnight. Scared me to death. I didn't know where Curtis was, someone was out side banging on my window and then on the front door. I went to side window to see if I could see someone and no one was there so I just hide by the side waiting to see if I could find out who was trying to get into my house!! It ended up being Curtis locked out of the house at midnight.
Cayden we love him in our family but sometimes his obsession gets him and us into trouble.
